Made some lasagna, aiming for a smaller recipe than the behemoth I'd run a few times before; turned out good. Still ended up with about 4 servings, but that was an improvement over the oh-god-leftovers-again quantity that we had before.

Had a lot of ricotta left over because it was hard to purchase ricotta in small quantities and I don't like a ton of ricotta in my lasagna. Turns out it's delicious as a spread on pepperidge farm Bordeaux cookies.

The oh-god-leftovers-again quantities can be put in freezer bags and eaten in the future.
