Adapted a recipe for Islandske Peppernøtter that I found randomly on imgur; the first attempt turned out ok, the second attempt turned out great. Great version is:

Mix together
1c flour
1/2c sugar
dash salt
1.5tsp pepper
1tsp cinnamon
1tsp baking powder
then mash in
6 tbs butter
mixing with hands, then
1 large egg
mix with hands some more, adding just a little dribble of water until it holds together ok, roll it out into a couple of snake shapes, and cut off thinnish rectangles with a knife. Bake 'em at 350degF for about 20m or until they're as golden brown as you want them on the bottom.

They're basically rectangular snickerdoodles, but with black pepper, which I found a surprisingly tasty addition.
