Huh, I really like this slide deck which is a friendly introduction to 3d graphics concepts. One thing in it I hadn't heard of, since it was actually more recent than the last time I'd taken a computer graphics class in 19mumbletymumble is Parallax Mapping, a delightfully nice why-didn't-I-think-of-that enhancement to normal mapping: you displace the uv coordinate of where you look up the texture by an amount that accounts for the parallax that would happen if the texture was actually bumpy. And then you add in some other correction term that prevents "texture swimming". Here is a nice paper a couple of steps further along the research hill-climbing gradient which has some good illustrations.
