Late lunch food adventure ended up with something in the vicinity of chili or cassoulet. Some pork sausage on a standard garlic/tomato/onion sauce base, some carrots, some white beans, cooked until delicious mush. Spice mix was mostly thyme, oregano, basil that came from the giant tub of "Italian spice" that I'd bought a while ago and still barely made a dent in, but also black pepper and chili pepper. Put some cheddar and cholula on top, toasted some pita for sauce-wiping-up, was altogether quite good.
I am looking at actual cassoulet recipies and they take like days. And involve ducks. That sounds hard. Pork sausage and beans is good though.
